Ingredients

  • 15 oz shredded hash browns
  • 8 oz sharp cheddar cheese, shredded
  • 1 tsp salt
  • 12 eggs
  • 1 lb sausage, browned and crumbled
  • 8 oz cream cheese, softened
  • 1 cup milk
  • 1 tsp black pepper
  • 1/4 cup flour

Instructions

  1. Preheat oven to 350ยฐF. Brown sausage in a skillet, drain fat, and set aside.
  2. In a bowl, combine hash browns, salt, and pepper. Stir in softened cream cheese until distributed.
  3. Spread hash brown mixture into a 9×13 inch baking dish. Scatter sausage over the hash browns, then sprinkle with 4 oz cheddar cheese.
  4. Whisk flour and milk until smooth. In a separate bowl, beat eggs. Pour milk mixture into eggs and whisk.
  5. Pour egg mixture evenly over the casserole. Sprinkle remaining 4 oz cheddar cheese on top.
  6. Bake for 30-40 minutes until eggs are set and the top is golden.
  7. Let rest for 5-10 minutes before cutting and serving.

Notes

  • Squeeze excess moisture from hash browns to prevent a soggy casserole.
  • Letting the casserole rest before cutting makes portioning cleaner.
  • This bake can be served warm or at room temperature.
