30-Minute Dinner Ideas (Quick) Garlic Parmesan Shrimp Linguine

Make a fast and flavorful shrimp linguine dinner in under 30 minutes using condensed soup for a quick sauce.

Ingredients

  • 8 ounces uncooked linguine
  • 1 pound uncooked shrimp, peeled and deveined
  • 1 tablespoon olive oil
  • 1 large onion, diced
  • 1 can (10.5 ounces) Campbell’s Condensed Garlic Parmesan with Herbs Soup
  • 1 cup Swanson Chicken Broth
  • 2 tablespoons lemon juice
  • 1 tablespoon grated lemon zest
  • 1/4 teaspoon crushed red pepper
  • 5 ounces baby spinach
  • 1/4 cup grated Parmesan cheese (optional)
  • 1/4 cup thinly sliced fresh basil leaves (optional)

Instructions

  1. Cook and drain the linguine following package directions. Season the shrimp with salt and pepper while the pasta cooks.
  2. Heat the olive oil in a 12-inch skillet over medium-high heat. Add the shrimp and cook for 4 minutes or until done. Remove the shrimp from the skillet.
  3. Add the onion to the skillet and cook for 3 minutes until tender-crisp.
  4. Stir in the soup, broth, lemon juice, lemon zest, and red pepper. Heat the mixture to a boil.
  5. Add the spinach and cook and stir just until the spinach wilts.
  6. Stir in the cooked linguine and shrimp. Cook until the mixture is hot.
  7. Season the dish to taste. Sprinkle with Parmesan cheese and basil before serving, if you choose to use them.

Notes

  • You can substitute chicken broth for vegetable broth if you prefer.
  • For a thicker sauce, reduce the amount of chicken broth slightly.
