Hobo Casserole

A simple and hearty ground beef and potato casserole topped with cheese.

Ingredients

  • 1 lb (450g) lean ground beef
  • 1 small yellow onion, diced
  • 45 medium russet potatoes, peeled and thinly sliced (about 3 cups)
  • 1 (10.5 oz) can cream of mushroom soup
  • 1/2 cup whole milk
  • 1 (15 oz) can sweet corn, drained
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp salt, or to taste
  • 1/4 tsp black pepper, or to taste
  • 1 tsp Worcestershire sauce
  • 1 1/2 cups shredded cheddar cheese

Instructions

  1. Brown ground beef in a skillet over medium-high heat. Add diced onion and cook until softened, about 5-7 minutes. Drain excess fat.
  2. Stir in garlic powder, onion powder, salt, pepper, and Worcestershire sauce. Mix well.
  3. In a 9×13 inch baking dish, layer half of the sliced potatoes.
  4. Spread the ground beef mixture evenly over the potato layer.
  5. Top with the remaining sliced potatoes.
  6. In a medium bowl, whisk together cream of mushroom soup and milk until smooth. Stir in drained corn.
  7. Pour the soup mixture evenly over the casserole.
  8. Bake in a preheated oven at 375ยฐF (190ยฐC) for 50-60 minutes, or until potatoes are tender and casserole is bubbly.
  9. Sprinkle cheddar cheese over the top and bake for another 10-15 minutes, until cheese is melted and bubbly.
  10. Let rest for a few minutes before serving.

Notes

  • Do not overmix the ground beef to keep it tender.
  • Leftovers store well in the refrigerator when covered tightly.
  • Cream of chicken soup can be substituted for cream of mushroom soup.
  • Fresh parsley can be added as a garnish.
