Anti-Inflammatory Chicken Soup

A nourishing chicken soup designed to help reduce inflammation.

Ingredients

  • 1 tablespoon olive oil
  • 1 large onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 2 cloves garlic, minced
  • 8 cups chicken broth
  • 1 pound boneless, skinless chicken breasts
  • 1 teaspoon turmeric
  • 1/2 teaspoon ginger
  • Salt and pepper to taste
  • 1/4 cup chopped fresh parsley

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, carrots, and celery. Cook until softened, about 5-7 minutes.
  3. Add garlic and cook for 1 minute more until fragrant.
  4. Pour in chicken broth. Add chicken breasts, turmeric, and ginger.
  5. Bring to a boil, then reduce heat and simmer for 20-25 minutes, or until chicken is cooked through.
  6. Remove chicken, shred it, and return it to the pot.
  7. Season with salt and pepper.
  8. Stir in fresh parsley before serving.

Notes

  • For extra flavor, add a bay leaf while simmering.
  • You can substitute bone-in chicken for a richer broth.
