Bacon Egg Cheese Breakfast Quesadillas

A quick and easy breakfast quesadilla with bacon, eggs, and cheese.

Ingredients

  • 1 8 inch flour tortilla
  • 2 slices cooked and chopped bacon
  • 2 large eggs
  • ⅓ cup shredded cheddar cheese
  • salt and pepper to taste
  • 1 teaspoon butter (optional)

Instructions

  1. Whisk eggs with salt and pepper in a small bowl.
  2. Heat a non-stick skillet over medium-low heat and melt butter if using.
  3. Pour eggs into the pan and cook until edges are set, about 2-3 minutes.
  4. Sprinkle half the bacon and cheese over the eggs.
  5. Place tortilla over the eggs and press gently.
  6. Flip the quesadilla and cook until the tortilla is golden brown, about 2 minutes.
  7. Sprinkle remaining bacon and cheese on top.
  8. Fold the quesadilla in half and cook both sides until golden brown and cheese is melted, about 2-3 minutes.
  9. Remove from pan, let rest briefly, slice, and serve warm.

Notes

  • Turkey bacon can be used as a lighter option.
  • Butter is optional for a richer finish on the tortilla.
