Baked Chicken with Sweet Potatoes

A simple and healthy baked chicken and sweet potato dish.

Ingredients

  • 1 pound boneless, skinless chicken breasts
  • 2 medium sweet potatoes, peeled and cubed
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 1/4 teaspoon garlic powder

Instructions

  1. Preheat your oven to 400ยฐF (200ยฐC).
  2. In a large bowl, toss the cubed sweet potatoes with 1 tablespoon of olive oil, salt, pepper, paprika, and garlic powder.
  3. Spread the sweet potatoes in a single layer on a baking sheet.
  4. Bake for 20 minutes.
  5. While the sweet potatoes are baking, toss the chicken breasts with the remaining 1 tablespoon of olive oil.
  6. After 20 minutes, add the seasoned chicken breasts to the baking sheet with the sweet potatoes.
  7. Return the baking sheet to the oven and bake for another 20-25 minutes, or until the chicken is cooked through and the sweet potatoes are tender.
  8. Let rest for 5 minutes before serving.

Notes

  • You can add other vegetables like broccoli or bell peppers to the baking sheet.
  • For extra flavor, you can marinate the chicken for 30 minutes before baking.
