  • 2 pounds boneless, skinless chicken breasts, cut into 1-inch cubes
  • 1 tablespoon vegetable oil
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon kosher salt
  • 0.5 teaspoon black pepper
  • 4 cups prepared white rice, warmed
  • 2 cups red cabbage, thinly sliced
  • 1 large carrot, julienned
  • 1 medium cucumber, halved and sliced
  • 1 large avocado, thinly sliced
  • fresh cilantro, chopped for garnish
  • sesame seeds for garnish

Instructions

  1. In a bowl, combine mayonnaise, Thai sweet chili sauce, honey, and Sriracha to create the creamy sauce.
  2. In a large pan, heat vegetable oil over medium-high heat. Add chicken cubes and season with paprika, garlic powder, kosher salt, and black pepper. Cook until chicken is cooked through.
  3. Divide the warm rice among four bowls. Top each bowl with cooked chicken, red cabbage, carrot, cucumber, and avocado.
  4. Drizzle with the creamy sauce, then garnish with chopped cilantro and sesame seeds.

Notes

  • For a spicier sauce, add more Sriracha.
  • You can substitute chicken thighs for chicken breasts.
