Bang Bang Chicken Bowl

A simple recipe for a spicy and sweet Bang Bang Chicken Bowl.

  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1/2 cup all-purpose flour
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 large egg, beaten
  • 1/2 cup panko breadcrumbs
  • 1 tablespoon vegetable oil for cooking
  • 1/2 cup mayonnaise
  • 1/4 cup sweet chili sauce
  • 1 tablespoon sriracha sauce
  • 1 teaspoon rice vinegar
  • 4 cups cooked white rice
  • 2 cups shredded lettuce
  • 1 cup shredded carrots
  • 1/2 cup sliced green onions for garnish

Instructions

  1. Place flour, salt, and pepper on one plate. Place beaten egg on a second plate. Place panko breadcrumbs on a third plate.
  2. Dredge chicken pieces first in the flour mixture, then dip in the egg, and finally coat thoroughly with panko breadcrumbs.
  3. Heat vegetable oil in a large skillet over medium-high heat. Cook chicken pieces until golden brown and cooked through, about 5-7 minutes. Set aside.
  4. In a small bowl, whisk together mayonnaise, sweet chili sauce, sriracha sauce, and rice vinegar to make the Bang Bang sauce.
  5. In a separate bowl, toss the cooked chicken with most of the Bang Bang sauce, reserving some for drizzling.
  6. To assemble the bowls, divide the cooked rice among four bowls. Top the rice with shredded lettuce and shredded carrots.
  7. Place the sauced chicken on top of the vegetables. Drizzle with any remaining sauce.
  8. Garnish with sliced green onions before serving.

Notes

  • You can bake the chicken at 400 degrees Fahrenheit for 15-20 minutes instead of frying for a lower fat option.
  • Adjust the amount of sriracha to control the spice level.
