BBQ Chicken Sweet Potato Skillet

A simple and flavorful skillet meal with chicken, sweet potatoes, and BBQ sauce.

  • 1 tablespoon olive oil
  • 1 pound boneless, skinless chicken thighs, cut into 1-inch pieces
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 large sweet potato, peeled and diced
  • 1/2 cup chopped onion
  • 1/2 cup BBQ sauce
  • 1/4 cup chicken broth
  • 2 tablespoons chopped fresh parsley, for garnish

Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add chicken pieces, salt, pepper, garlic powder, and paprika. Cook until browned on all sides.
  3. Add diced sweet potato and chopped onion to the skillet. Cook for 5 minutes, stirring occasionally.
  4. Pour in BBQ sauce and chicken broth. Stir to combine.
  5. Bring to a simmer, then reduce heat to low, cover, and cook for 15-20 minutes, or until sweet potatoes are tender and chicken is cooked through.
  6. Garnish with fresh parsley before serving.

Notes

  • You can substitute chicken breasts for chicken thighs if preferred.
  • Adjust the amount of BBQ sauce to your taste.
  • For a spicier dish, add a pinch of red pepper flakes.
