Beef Lettuce Wraps

Ingredients

  • 1 tablespoon olive oil
  • 1 pound ground beef
  • 1/2 cup chopped onion
  • 2 cloves garlic, minced
  • 1/4 cup soy sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 1 teaspoon grated fresh ginger
  • 1/4 teaspoon red pepper flakes (optional)
  • 8 large lettuce leaves (such as butter or iceberg)
  • 2 tablespoons chopped peanuts (optional)
  • 1 tablespoon chopped fresh cilantro (optional)

Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add ground beef and cook, breaking it up with a spoon, until browned. Drain off any excess grease.
  3. Add chopped onion to the skillet and cook until softened, about 5 minutes.
  4. Stir in minced garlic and cook for 1 minute more until fragrant.
  5. In a small bowl, whisk together soy sauce, rice vinegar, sesame oil, grated ginger, and red pepper flakes (if using).
  6. Pour the sauce over the beef mixture in the skillet. Stir to combine and cook for 2-3 minutes until the sauce has thickened slightly.
  7. Spoon the beef mixture into the lettuce leaves.
  8. Garnish with chopped peanuts and cilantro, if desired.

Notes

  • For a spicier wrap, add more red pepper flakes.
  • You can substitute ground turkey or chicken for ground beef.
  • Other vegetables like water chestnuts or shredded carrots can be added to the beef mixture.
