Classic Beef Stroganoff

Ingredients

  • 1.5 lbs beef sirloin, thinly sliced
  • 1 tbsp olive oil
  • 1 large onion, sliced
  • 8 oz mushrooms, sliced
  • 2 cloves garlic, minced
  • 1.5 cups beef broth
  • 0.5 cup sour cream
  • 2 tbsp all-purpose flour
  • 1 tbsp Worcestershire sauce
  • Salt and black pepper to taste
  • Cooked egg noodles, for serving

Instructions

  1. Season beef strips with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Brown beef in batches, then remove from skillet and set aside.
  3. Add onion and mushrooms to the skillet. Cook until softened, about 5-7 minutes.
  4. Stir in garlic and cook for 1 minute more until fragrant.
  5. Sprinkle flour over the vegetables and stir to coat. Cook for 1 minute.
  6. Gradually whisk in beef broth and Worcestershire sauce. Bring to a simmer, scraping up any browned bits from the bottom of the skillet.
  7. Reduce heat to low. Stir in sour cream until combined and the sauce is smooth. Do not boil.
  8. Return beef to the skillet and heat through.
  9. Season with salt and pepper to taste.
  10. Serve hot over cooked egg noodles.

Notes

  • For a richer flavor, you can use a mix of mushrooms like cremini and shiitake.
  • Ensure the sour cream is at room temperature to prevent curdling.
