Creamy Chicken Orzo with Mushrooms

A quick and easy creamy chicken orzo dish with mushrooms, perfect for busy weeknights.

Ingredients

  • 2 cups (450 g) orzo
  • 1 lb (450 g) boneless chicken thighs
  • 8 oz (225 g) fresh mushrooms, sliced
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 4 cups (960 ml) chicken broth
  • 1 cup (240 ml) heavy cream
  • 1 tsp dried thyme
  • Salt and pepper to taste
  • Fresh parsley, chopped
  • Olive oil for cooking

Instructions

  1. Gather all your ingredients.
  2. Heat a drizzle of olive oil in a large pot over medium heat.
  3. Add diced onion and sauté until translucent, about 3-4 minutes.
  4. Stir in minced garlic and cook for 30 seconds until fragrant.
  5. Add chicken thighs, season with salt and pepper, and sear for 5 minutes on each side.
  6. Remove browned chicken and set aside.
  7. Add sliced mushrooms to the pot and stir until tender, about 5-7 minutes.
  8. Return chicken to the pot with orzo and stir to coat.
  9. Pour in chicken broth and bring to a gentle boil.
  10. Reduce heat to simmer, cover, and cook for 10-12 minutes, stirring occasionally.
  11. Stir in heavy cream and dried thyme. Adjust seasoning.
  12. Serve garnished with chopped parsley.

Notes

  • For a richer flavor, you can use chicken thighs instead of breasts.
  • Adjust the amount of salt and pepper to your preference.
