Black Beans and Rice with Sausage

Ingredients

  • 1 tablespoon olive oil
  • 1 pound smoked sausage, sliced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 cup cooked white rice
  • 1/2 teaspoon cumin
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add sausage and cook until browned. Remove sausage from skillet and set aside.
  3. Add onion to the skillet and cook until softened, about 5 minutes.
  4. Add garlic and cook for 1 minute more until fragrant.
  5. Stir in black beans, cooked rice, cumin, salt, and pepper.
  6. Return sausage to the skillet and stir to combine.
  7. Cook until heated through, about 5 minutes.

Notes

  • Serve hot.
  • Garnish with chopped cilantro if desired.
