2 large flour tortillas
2 large eggs
1/4 cup shredded cheese (cheddar or Monterey Jack)
1 tablespoon milk or water
1 teaspoon butter or oil
Pinch of salt
Pinch of black pepper
Instructions
Whisk eggs, milk, salt, and pepper together in a small bowl.
Heat butter or oil in a non-stick skillet over medium heat.
Pour the egg mixture into the skillet and cook, stirring gently, until the eggs are mostly set but still slightly moist. Remove eggs from the skillet and set aside.
Wipe the skillet clean if necessary. Place one tortilla in the skillet over medium-low heat.
Sprinkle half of the cheese over the tortilla. Top with the cooked eggs. Sprinkle the remaining cheese over the eggs.
Place the second tortilla on top of the filling.
Cook for 2-3 minutes until the bottom tortilla is golden brown and the cheese starts to melt.
Carefully flip the quesadilla using a large spatula. Cook for another 2-3 minutes until the second side is golden brown and the cheese is fully melted.
Remove from the skillet, let it cool for one minute, then slice into wedges.
Notes
For extra flavor, add a dash of hot sauce to the eggs before cooking.
You can substitute regular cheese with a dairy-free alternative if needed.
Use whole wheat tortillas for added fiber.
