Brown Butter Banana Bread (Bakery-Style)

Make bakery-style banana bread with a rich, nutty flavor by browning the butter before mixing.

  • 1/2 cup unsalted butter (113 grams)
  • 3/4 cup granulated sugar (165 grams)
  • 2 large eggs
  • 1 teaspoon vanilla
  • 3 large very ripe bananas (about 350 grams)
  • 1 1/2 cups all-purpose flour (210 grams)
  • 2 1/2 teaspoons baking powder
  • 1 teaspoon Diamond Crystal kosher salt (use half if using Mortonโ€™s)

Instructions

  1. Preheat the oven to 375ยฐF.
  2. Brown the butter in a small saucepan by melting it, letting it foam, and cooking for 3-5 minutes, stirring occasionally until brown flecks form at the bottom. Transfer the butter to a bowl and whisk to cool slightly.
  3. Whisk the sugar and brown butter together for about one minute. Add the eggs and vanilla. Whisk vigorously until the mixture is smooth.
  4. Add the bananas to the bowl. Use a fork to mash them into small pieces; complete smoothness is not necessary. Whisk the banana mixture together.
  5. Add the flour, baking powder, and salt. Stir until you have a thick batter.
  6. Transfer the batter to a parchment-lined 9″x5″ loaf tin. Bake at 375ยฐF for 50-55 minutes.

Notes

  • You can add about 1/2 teaspoon of baking spices like cinnamon, nutmeg, allspice, or clove to this bread batter.
