Brownie Bites with Ganache

  • 1 cup unsalted butter, melted
  • 2 cups granulated sugar
  • 1 teaspoon vanilla extract
  • 4 large eggs
  • 1 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup semi-sweet chocolate chips
  • 1 cup heavy cream
  • 1 cup chopped semi-sweet chocolate

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a mini muffin tin.
  2. In a large bowl, whisk together melted butter and sugar.
  3. Stir in vanilla extract and eggs, one at a time, until well combined.
  4. In a separate bowl, whisk together flour, cocoa powder, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  6. Fold in the chocolate chips.
  7. Spoon batter into the prepared mini muffin cups, filling each about two-thirds full.
  8. Bake for 15-18 minutes, or until a toothpick inserted into the center comes out with moist crumbs.
  9. Let the brownies cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.
  10. To make the ganache, heat the heavy cream in a small saucepan over medium heat until it just begins to simmer.
  11. Pour the hot cream over the chopped chocolate in a heatproof bowl. Let it sit for 5 minutes, then whisk until smooth and glossy.
  12. Spoon or pipe the ganache over the cooled brownie bites.
  13. Let the ganache set before serving.

Notes

  • For a richer ganache, use dark chocolate.
  • Store leftover brownie bites in an airtight container at room temperature for up to 3 days.
