Buckeye Graham Crackers

A simple recipe for homemade graham crackers with a peanut butter filling, inspired by the classic Buckeye candy.

  • 2 cups all-purpose flour
  • 1 cup graham cracker crumbs
  • 1/2 cup granulated sugar
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup (2 sticks) unsalted butter, softened
  • 1/4 cup honey
  • 1 teaspoon vanilla extract
  • 1 cup creamy peanut butter
  • 1/2 cup powdered sugar

Instructions

  1. Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a large bowl, whisk together the flour, graham cracker crumbs, granulated sugar, baking soda, and salt.
  3. Add the softened butter, honey, and vanilla extract to the dry ingredients. Mix until a dough forms.
  4. Divide the dough in half. Wrap each half in plastic wrap and chill for at least 30 minutes.
  5. While the dough chills, prepare the peanut butter filling. In a medium bowl, combine the peanut butter and powdered sugar. Mix until smooth.
  6. On a lightly floured surface, roll out one half of the dough to about 1/4-inch thickness. Cut into desired shapes (squares or rectangles work well).
  7. Place about 1 teaspoon of peanut butter filling onto half of the dough shapes. Top with the remaining dough shapes, pressing the edges to seal.
  8. Place the cookies on the prepared baking sheets.
  9. Bake for 10-12 minutes, or until lightly golden brown.
  10. Let the cookies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.

Notes

  • You can use a cookie cutter for decorative shapes.
  • For a more pronounced peanut butter flavor, you can add a pinch of salt to the filling.
  • Store cooled cookies in an airtight container at room temperature.
