Budget-Friendly Chicken and Vegetable Stir-Fry

Ingredients

  • 1 lb boneless, skinless chicken breast, cut into bite-sized pieces
  • 2 cups mixed vegetables (broccoli florets, sliced carrots, bell pepper strips)
  • 1/4 cup low-sodium soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon cornstarch
  • 1 clove garlic, minced
  • 1 teaspoon grated fresh ginger
  • 2 cups cooked brown rice, for serving

Instructions

  1. In a small bowl, whisk together soy sauce, sesame oil, cornstarch, garlic, and ginger.
  2. Add chicken pieces to the bowl and toss to coat. Let marinate for 10 minutes.
  3. Heat a large skillet or wok over medium-high heat.
  4. Add marinated chicken and stir-fry until cooked through, about 5-7 minutes.
  5. Add mixed vegetables to the skillet and stir-fry until tender-crisp, about 5-7 minutes more.
  6. Serve the stir-fry over cooked brown rice.

Notes

  • Feel free to substitute chicken with tofu or shrimp for a different protein.
  • Use any vegetables you have on hand to reduce waste and cost.
  • For extra flavor, add a pinch of red pepper flakes.
