Cajun Chicken Skillet

Ingredients

  • 1 tablespoon olive oil
  • 1 pound boneless, skinless chicken thighs, cut into 1-inch pieces
  • 1 teaspoon Cajun seasoning
  • 1 medium onion, chopped
  • 1 green bell pepper, chopped
  • 1 red bell pepper, chopped
  • 2 cloves garlic, minced
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1/2 cup chicken broth
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • Cooked rice, for serving

Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add chicken and Cajun seasoning. Cook until browned on all sides, about 5-7 minutes. Remove chicken from skillet and set aside.
  3. Add onion and bell peppers to the skillet. Cook until softened, about 5 minutes.
  4. Add garlic and cook for 1 minute more until fragrant.
  5. Return chicken to the skillet. Stir in diced tomatoes and chicken broth.
  6. Bring to a simmer, then reduce heat and cook for 10-15 minutes, or until chicken is cooked through and sauce has thickened slightly.
  7. Season with salt and pepper.
  8. Serve over cooked rice.

Notes

  • Adjust Cajun seasoning to your spice preference.
  • You can add other vegetables like corn or okra.
