Cheddar and Herb Soda Bread - Tasty

A simple and quick soda bread recipe flavored with cheddar cheese and fresh herbs.

Ingredients

  • 450g (3 ½ cups) all-purpose flour
  • 1 tsp baking soda
  • ½ tsp salt
  • 1 tsp dried mixed herbs (or 2 tbsp fresh mixed herbs)
  • 100g (1 cup) grated mature cheddar cheese
  • 300ml (1 ¼ cups) buttermilk

Instructions

  1. Preheat your oven to 200°C (400°F). Lightly grease a baking sheet.
  2. In a large bowl, whisk together the flour, baking soda, salt, and mixed herbs.
  3. Stir in the grated cheddar cheese.
  4. Make a well in the center of the dry ingredients and pour in the buttermilk.
  5. Mix with a knife or your hands until a soft, slightly sticky dough forms. Do not overmix.
  6. Turn the dough out onto a lightly floured surface and gently shape it into a round, about 4cm (1.5 inches) thick.
  7. Place the dough on the prepared baking sheet.
  8. Cut a deep cross into the top of the dough with a sharp knife.
  9. Bake for 30-35 minutes, or until the bread is golden brown and sounds hollow when tapped on the bottom.
  10. Transfer to a wire rack to cool.

Notes

  • You can substitute the buttermilk with regular milk with 1 tablespoon of lemon juice or white vinegar added, left to stand for 5 minutes.
  • Feel free to experiment with different herbs like chives, parsley, or rosemary.
