Cheesy Buffalo Chicken Burritos

  • 1 pound boneless, skinless chicken breasts
  • 1/2 cup buffalo sauce
  • 1/4 cup ranch dressing
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 8 large flour tortillas
  • 2 cups shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • Optional toppings: sour cream, chopped cilantro, sliced jalapeรฑos

Instructions

  1. Preheat your oven to 375ยฐF (190ยฐC).
  2. Place chicken breasts in a baking dish.
  3. In a small bowl, whisk together buffalo sauce, ranch dressing, garlic powder, onion powder, salt, and pepper.
  4. Pour half of the sauce mixture over the chicken.
  5. Bake for 20-25 minutes, or until chicken is cooked through.
  6. Remove chicken from the oven and shred it using two forks.
  7. Return shredded chicken to the baking dish and toss with the remaining sauce mixture.
  8. Warm the tortillas according to package directions.
  9. Spoon the chicken mixture evenly into the center of each tortilla.
  10. Top the chicken with cheddar and Monterey Jack cheeses.
  11. Fold in the sides of the tortillas, then roll them up tightly.
  12. Place burritos seam-side down in a baking dish.
  13. Bake for 10-15 minutes, or until cheese is melted and bubbly.
  14. Serve hot with your favorite toppings.

Notes

  • For extra spice, add a pinch of cayenne pepper to the sauce.
  • If you don’t have ranch dressing, blue cheese dressing also works well.
  • You can cook the chicken in a slow cooker on low for 3-4 hours if you prefer.
