Cheesy Chicken and Rice Bake for the Whole Family

Ingredients

  • 1.5 lbs boneless, skinless chicken breasts
  • 1 cup long-grain rice
  • 2 cups chicken broth
  • 1 (10.75 ounce) can condensed cream of chicken soup
  • 1 cup milk
  • 1 cup shredded cheddar cheese
  • 1/2 cup chopped onion
  • 1/4 cup butter
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375ยฐF (190ยฐC).
  2. Cook rice according to package directions.
  3. Season chicken with salt and pepper.
  4. Melt butter in a skillet and cook onion until softened.
  5. Add chicken to the skillet and cook until browned.
  6. In a baking dish, combine cooked rice, chicken, soup, milk, and onion.
  7. Top with cheese.
  8. Bake for 25-30 minutes, or until chicken is cooked through and cheese is melted and bubbly.

Notes

  • You can substitute cream of mushroom soup.
  • Add vegetables like peas or carrots for extra nutrients.
  • Adjust cheese amount to your preference.
