Cheesy Chicken and Rice Casserole for Comfort

  • 1 lb Boneless chicken breasts
  • 1 cup Long-grain white rice
  • 2 cups Chicken broth
  • 2 cups Cheddar cheese
  • 8 oz Cream cheese
  • 1/2 cup Milk
  • 1 tsp Garlic powder
  • 1 tsp Onion powder
  • 1 tsp Salt
  • 1/2 tsp Pepper
  • 1/2 cup Parmesan cheese
  • 1/4 cup Fresh parsley

Instructions

  1. Preheat oven to 375°F and grease a 9×13-inch baking dish.
  2. Combine diced chicken, rice, chicken broth, garlic powder, onion powder, salt, and pepper in the baking dish. Stir to blend.
  3. Cover the dish with foil and bake for 30 minutes, or until rice is tender and chicken reaches 165°F.
  4. While the casserole bakes, heat milk and cream cheese in a saucepan over medium heat until smooth, about 3-4 minutes.
  5. Stir in shredded cheddar cheese until melted, creating a cheese sauce.
  6. Pour the cheese sauce evenly over the chicken and rice mixture.
  7. Sprinkle grated Parmesan cheese over the top. Remove foil and bake uncovered for 10-15 minutes until bubbly and golden.
  8. Let the casserole rest for 5 minutes before serving.
