Cheesy Ground Beef & Potato Casserole (One-Pan Dinner!)

A simple and hearty one-pan casserole featuring ground beef, potatoes, and green beans, topped with melted cheddar cheese.

  • 1 pound ground beef
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper
  • 4 medium potatoes, diced
  • 2 cups green beans, trimmed and cut into 1-inch pieces
  • 1 medium onion, finely chopped
  • 2 cups beef broth
  • 1 can (10.5 ounces) condensed cream of mushroom soup
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon dried thyme
  • ยฝ teaspoon paprika
  • 1 cup shredded cheddar cheese

Instructions

  1. Preheat oven to 350ยฐF (175ยฐC).
  2. In a large skillet over medium heat, brown the ground beef with salt and pepper. Drain excess fat.
  3. In a mixing bowl, combine cooked beef with potatoes, green beans, onion, broth, cream of mushroom soup, Worcestershire sauce, garlic powder, thyme, and paprika.
  4. Transfer the mixture to a greased 9×13 inch baking dish.
  5. Cover with foil and bake for 1 hour.
  6. Remove foil and stir; bake uncovered for an additional 15-20 minutes or until potatoes are tender.
  7. Add cheese on top and return to oven until melted.
  8. Let sit before serving.

Notes

  • For a richer flavor, you can use a mix of cheddar and Monterey Jack cheese.
  • If you don’t have beef broth, chicken broth can be substituted.
  • Ensure potatoes are cut into uniform pieces for even cooking.
