1 tablespoon olive oil
1 cup diced onion
2 cloves garlic, minced
1 pound ground beef
1 teaspoon paprika
½ teaspoon salt
½ teaspoon black pepper
½ teaspoon dried oregano
1 cup uncooked white rice
2 cups beef broth or water
1 cup frozen mixed vegetables
1 cup shredded cheddar cheese
1 cup breadcrumbs (optional)
Instructions
Preheat your oven to 350°F (175°C).
Heat olive oil in a large skillet over medium heat. Add onion and cook until translucent. Add garlic and ground beef, cook until browned. Drain excess fat.
Stir in paprika, salt, black pepper, and oregano. Cook for 1 minute.
Add uncooked rice, beef broth (or water), and frozen mixed vegetables to the skillet. Stir to combine.
Pour the mixture into a greased 9×13 inch casserole dish.
Cover with aluminum foil and bake for 25 minutes.
Remove foil, sprinkle cheddar cheese and optional breadcrumbs over the top.
Bake uncovered for 10-15 minutes, until cheese is bubbly and golden.
Let cool for a few minutes before serving.
Notes
You can substitute ground turkey or chicken for ground beef.
Brown rice can be used, but cooking time may need adjustment.
Leftovers can be stored in an airtight container in the refrigerator for 3-4 days or frozen for 2-3 months.
