Chicken Alfredo Skillet with Creamy Sauce

A quick and easy one-pan Chicken Alfredo made with fettuccine pasta and a rich, creamy sauce.

  • 1.5 lbs boneless, skinless chicken breasts or thighs, cut into 1-inch pieces
  • 2 tablespoons olive oil
  • 6 tablespoons unsalted butter
  • 46 cloves garlic, minced
  • 2 tablespoons all-purpose flour
  • 2 cups low sodium chicken broth
  • 1.5 cups heavy cream
  • 810 ounces uncooked fettuccine pasta
  • 1.5 cups freshly grated Parmesan cheese
  • 1 teaspoon salt, or to taste
  • 1/2 teaspoon black pepper, or to taste
  • 1/4 cup chopped fresh parsley, for garnish (optional)
  • A tiny pinch of nutmeg (optional)

Instructions

  1. Season cubed chicken with 1/2 teaspoon salt and 1/4 teaspoon black pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Sear chicken until golden brown on all sides. Remove chicken and set aside.
  3. Reduce heat to medium. Add butter to the skillet. Once melted, sauté garlic for 1-2 minutes until fragrant.
  4. Sprinkle flour over butter and garlic. Whisk for 1-2 minutes to cook out raw flour taste.
  5. Gradually whisk in chicken broth until smooth. Bring to a gentle simmer.
  6. Pour in heavy cream and simmer for 2-3 minutes until slightly thickened.
  7. Add uncooked fettuccine to the sauce. Ensure pasta is mostly submerged. Add more broth or water if needed.
  8. Cover skillet, reduce heat to medium-low, and cook for 10-15 minutes, stirring occasionally, until pasta is al dente.
  9. Remove from heat. Stir in Parmesan cheese until melted and sauce is smooth. Add remaining salt, pepper, and nutmeg (if using).
  10. Return cooked chicken to the skillet and stir to combine.
  11. Let rest for 2-3 minutes. Garnish with parsley before serving.

Notes

  • Do not use pre-grated Parmesan cheese as it will not melt properly.
  • Cook chicken in batches if necessary to avoid overcrowding the pan.
  • Be careful not to burn the garlic.
  • Stir pasta occasionally to prevent sticking.
  • The sauce will thicken as it cools.
