Chicken Broccoli Skillet

Ingredients

  • 1 tablespoon olive oil
  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 cups broccoli florets
  • 1/4 cup chicken broth
  • 2 tablespoons soy sauce
  • 1 tablespoon cornstarch

Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add chicken pieces, garlic powder, onion powder, salt, and pepper. Cook until chicken is browned on all sides.
  3. Add broccoli florets to the skillet.
  4. In a small bowl, whisk together chicken broth and cornstarch until smooth. Pour the mixture over the chicken and broccoli.
  5. Bring to a simmer and cook, stirring occasionally, until the sauce thickens and the broccoli is tender-crisp, about 5-7 minutes.
  6. Stir in soy sauce.
  7. Serve immediately.

Notes

  • For extra flavor, you can add a pinch of red pepper flakes.
  • Serve over rice or quinoa for a complete meal.
