Chicken Manicotti Alfredo

A creamy and cheesy baked pasta dish featuring manicotti shells filled with chicken and smothered in Alfredo sauce.

  • 12 manicotti shells
  • 1 pound ground chicken
  • 1 tablespoon olive oil
  • 1 cup ricotta cheese
  • 1/2 cup grated Parmesan cheese
  • 1 egg
  • 1 teaspoon dried parsley
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 cups Alfredo sauce
  • 1 cup shredded mozzarella cheese

Instructions

  1. Cook manicotti shells according to package directions. Drain and set aside.
  2. Preheat oven to 375°F (190°C).
  3. In a skillet, heat olive oil over medium heat. Add ground chicken and cook until browned. Drain any excess grease.
  4. In a bowl, combine ricotta cheese, Parmesan cheese, egg, parsley, salt, and pepper. Stir in the cooked chicken.
  5. Stuff the cooked manicotti shells with the chicken mixture.
  6. Spread a thin layer of Alfredo sauce in the bottom of a 9×13 inch baking dish.
  7. Arrange the stuffed manicotti shells in the baking dish.
  8. Pour the remaining Alfredo sauce over the manicotti.
  9. Sprinkle mozzarella cheese evenly over the top.
  10. Bake for 20-25 minutes, or until the sauce is bubbly and the cheese is melted and lightly browned.
  11. Let stand for 5 minutes before serving.

Notes

  • For a richer flavor, you can add a pinch of nutmeg to the ricotta mixture.
  • If you don’t have ground chicken, you can use shredded cooked chicken.
  • You can make this dish ahead of time and refrigerate it. Add a few extra minutes to the baking time if baking from cold.
