Chicken Normandy

Chicken Normandy or French Apple - Tasty

A classic French dish featuring chicken braised with apples, cider, and cream.

Ingredients

  • 2 tbsp butter
  • 1 tbsp olive oil
  • 4 boneless, skinless chicken breasts
  • 1 onion, chopped
  • 2 apples, peeled, cored, and sliced
  • 1 cup apple cider
  • 1/2 cup heavy cream
  • 1 tsp Dijon mustard
  • Salt and pepper to taste
  • Fresh parsley, chopped, for garnish

Instructions

  1. Season chicken breasts with salt and pepper.
  2. Heat butter and olive oil in a large skillet over medium-high heat.
  3. Sear chicken breasts until golden brown on both sides. Remove chicken from skillet and set aside.
  4. Add chopped onion to the skillet and cook until softened, about 5 minutes.
  5. Add sliced apples and cook for 3-4 minutes until slightly tender.
  6. Pour in apple cider and scrape up any browned bits from the bottom of the skillet.
  7. Bring to a simmer and cook for 5 minutes.
  8. Return chicken to the skillet. Reduce heat to low, cover, and simmer for 15-20 minutes, or until chicken is cooked through.
  9. Stir in heavy cream and Dijon mustard. Heat through, but do not boil.
  10. Season with salt and pepper to taste.
  11. Garnish with fresh parsley before serving.

Notes

  • For a richer flavor, use chicken thighs instead of breasts.
  • You can substitute Calvados (apple brandy) for some of the apple cider for a more intense apple flavor.
  • Serve with mashed potatoes or crusty bread to soak up the sauce.
