Chicken Parm Cottage Bowl

Ingredients

  • 1 lb boneless, skinless chicken breasts
  • 1 cup marinara sauce
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 2 lbs potatoes, peeled and cubed
  • 1/4 cup milk
  • 2 tbsp butter
  • Salt and pepper to taste
  • 1 tbsp olive oil
  • 1/4 cup breadcrumbs

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Boil potatoes until tender, about 15-20 minutes. Drain.
  3. Mash potatoes with milk, butter, salt, and pepper until smooth.
  4. Cut chicken breasts into bite-sized pieces.
  5. In a skillet, heat olive oil over medium-high heat. Add chicken and cook until browned.
  6. Stir in marinara sauce and simmer for 5 minutes.
  7. Pour chicken mixture into a baking dish.
  8. Top with mozzarella and Parmesan cheeses.
  9. Bake for 10-15 minutes, or until cheese is melted and bubbly.
  10. Serve chicken mixture over mashed potatoes.
  11. Sprinkle with breadcrumbs before serving.

Notes

  • For extra flavor, add garlic powder to the mashed potatoes.
  • You can use pre-made mashed potatoes to save time.
  • Garnish with fresh basil if desired.
