Ingredients

  • 2 large zucchini
  • 1 lb ground chicken
  • 1/2 cup marinara sauce
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup shredded mozzarella cheese
  • 1 tsp Italian seasoning
  • 1/2 tsp garlic powder
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375ยฐF (190ยฐC).
  2. Cut the zucchini in half lengthwise and scoop out the seeds to create boats.
  3. In a bowl, combine the ground chicken, marinara sauce, Italian seasoning, garlic powder, salt, and pepper.
  4. Fill the zucchini boats with the chicken mixture.
  5. Top each boat with Parmesan and mozzarella cheese.
  6. Place the zucchini boats on a baking sheet.
  7. Bake for 25-30 minutes, or until the zucchini is tender and the cheese is melted and golden brown.

Notes

  • You can add a sprinkle of red pepper flakes for a little heat.
  • Serve immediately.
