- 2 large zucchini
- 1 lb ground chicken
- 1/2 cup marinara sauce
- 1/4 cup grated Parmesan cheese
- 1/4 cup shredded mozzarella cheese
- 1 tsp Italian seasoning
- 1/2 tsp garlic powder
- Salt and pepper to taste
- Preheat your oven to 375ยฐF (190ยฐC).
- Cut the zucchini in half lengthwise and scoop out the seeds to create boats.
- In a bowl, combine the ground chicken, marinara sauce, Italian seasoning, garlic powder, salt, and pepper.
- Fill the zucchini boats with the chicken mixture.
- Top each boat with Parmesan and mozzarella cheese.
- Place the zucchini boats on a baking sheet.
- Bake for 25-30 minutes, or until the zucchini is tender and the cheese is melted and golden brown.
Notes
- You can add a sprinkle of red pepper flakes for a little heat.
- Serve immediately.
