Chicken Pesto Pasta

A simple and flavorful chicken pesto pasta dish.

Ingredients

  • 1 pound pasta
  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 2 tablespoons olive oil
  • 1/2 cup prepared pesto
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper to taste

Instructions

  1. Cook pasta according to package directions. Drain, reserving about 1/2 cup of pasta water.
  2. While pasta cooks, heat olive oil in a large skillet over medium-high heat. Add chicken and cook until browned and cooked through, about 5-7 minutes. Season with salt and pepper.
  3. Add cooked pasta and pesto to the skillet with the chicken. Toss to combine.
  4. If the pasta seems dry, add a little reserved pasta water, a tablespoon at a time, until desired consistency is reached.
  5. Stir in Parmesan cheese.
  6. Serve immediately.

Notes

  • For a richer flavor, you can add a splash of heavy cream with the pesto.
  • Fresh basil can be added as a garnish.
