1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
2 tablespoons olive oil
1/2 cup prepared pesto
1/4 cup grated Parmesan cheese
Salt and pepper to taste
Instructions
Cook pasta according to package directions. Drain, reserving about 1/2 cup of pasta water.
While pasta cooks, heat olive oil in a large skillet over medium-high heat. Add chicken and cook until browned and cooked through, about 5-7 minutes. Season with salt and pepper.
Add cooked pasta and pesto to the skillet with the chicken. Toss to combine.
If the pasta seems dry, add a little reserved pasta water, a tablespoon at a time, until desired consistency is reached.
Stir in Parmesan cheese.
Serve immediately.
Notes
For a richer flavor, you can add a splash of heavy cream with the pesto.
