Spooky Shredded Chicken and Rice Stuffed Peppers

Bell peppers filled with seasoned shredded chicken and rice, baked until tender. Perfect for a Halloween theme.

Ingredients

  • 4 large bell peppers (any color)
  • 1 tablespoon olive oil
  • 1 pound shredded cooked chicken
  • 1 cup cooked white rice
  • 1/2 cup tomato sauce
  • 1/4 cup chopped onion
  • 1/4 cup shredded cheddar cheese
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375ยฐF (190ยฐC).
  2. Cut the tops off the bell peppers and remove the seeds and membranes.
  3. In a bowl, combine the shredded chicken, cooked rice, tomato sauce, chopped onion, cheddar cheese, chili powder, cumin, salt, and pepper.
  4. Mix the ingredients well.
  5. Stuff the bell peppers evenly with the chicken and rice mixture.
  6. Place the stuffed peppers in a baking dish.
  7. Bake for 30-40 minutes, or until the peppers are tender and the filling is heated through.
  8. For a Halloween look, you can carve simple spooky faces into the peppers before stuffing and baking.

Notes

  • You can use leftover cooked chicken for this recipe.
  • Adjust seasonings to your preference.
  • Serve hot.
