Chicken and Sweet Potato Rice

A simple and flavorful dish featuring chicken and sweet potatoes cooked with rice.

Ingredients

  • 1 cup rice
  • 2 cups chicken broth
  • 1 boneless, skinless chicken breast, cut into bite-sized pieces
  • 1 medium sweet potato, peeled and diced
  • 1/2 cup frozen peas
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Cook rice according to package directions using chicken broth.
  2. While rice cooks, heat olive oil in a skillet over medium heat.
  3. Add chicken pieces and cook until browned on all sides.
  4. Add diced sweet potato to the skillet with the chicken. Cook for 5-7 minutes, or until slightly tender.
  5. Stir in frozen peas, salt, and pepper. Cook for another 2-3 minutes until peas are heated through.
  6. Once rice is cooked, fluff it with a fork.
  7. Stir the chicken and vegetable mixture into the cooked rice.
  8. Serve hot.

Notes

  • You can substitute chicken thighs for chicken breast.
  • Add other vegetables like carrots or broccoli if desired.
  • For a spicier dish, add a pinch of red pepper flakes.
