- 6 chicken thighs
- 600 g yellow potatoes, peeled & chopped
- 1 red bell pepper, diced
- 1 yellow bell pepper, diced
- 1 cup broccoli florets
- 2 carrots, peeled & chopped
- 3 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp smoked paprika
- 1 tsp dried oregano
- 1 tsp dried thyme
- Salt & pepper to taste
- 1 tbsp fresh parsley, chopped
- Preheat oven to 200ยฐC (400ยฐF).
- Toss potatoes, carrots, bell peppers, and broccoli with 2 tbsp olive oil and all seasonings.
- Rub chicken thighs with 1 tbsp olive oil, salt, and pepper.
- Spread seasoned vegetables evenly on a baking sheet.
- Nestle chicken thighs on top of the vegetables.
- Bake uncovered for 40โ45 minutes, flipping halfway through, until chicken is golden and cooked through.
- Garnish with fresh parsley and serve warm.
Notes
- For bone-in chicken thighs, the cooking time may need to be slightly adjusted.
- Ensure vegetables are cut into uniform sizes for even cooking.
