Chicken Wild Rice Casserole

  • 1 cup wild rice blend
  • 2 cups chicken broth
  • 1 tablespoon olive oil
  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 cup chopped yellow onion
  • 1 cup sliced mushrooms
  • 1/2 cup chopped celery
  • 1/4 cup all-purpose flour
  • 1 1/2 cups milk
  • 1/2 cup sour cream
  • 1/4 cup chopped fresh parsley
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup shredded cheddar cheese (optional)

Instructions

  1. Cook wild rice blend according to package directions using chicken broth.
  2. While rice cooks, heat olive oil in a large skillet over medium heat. Add chicken pieces and cook until browned and cooked through. Remove chicken from skillet and set aside.
  3. Add onion, mushrooms, and celery to the same skillet. Cook until softened, about 5-7 minutes.
  4. Sprinkle flour over the vegetables and stir to coat. Cook for 1 minute.
  5. Gradually whisk in milk until smooth. Bring to a simmer, stirring constantly, until thickened.
  6. Stir in sour cream, parsley, salt, and pepper.
  7. Return chicken to the skillet. Add the cooked wild rice. Stir to combine.
  8. Transfer the mixture to a 9×13 inch baking dish.
  9. Bake at 375ยฐF (190ยฐC) for 20-25 minutes, or until heated through.
  10. Top with cheddar cheese, if desired, during the last 5 minutes of baking.

Notes

  • For a richer flavor, you can use cooked chicken instead of raw.
  • Add other vegetables like peas or carrots for extra nutrition.
  • This casserole can be made ahead and reheated.
