1.5 lbs boneless, skinless chicken breasts
1 tbsp olive oil
1 cup Kalamata olives, pitted
1/2 cup crumbled feta cheese
1/4 cup chopped fresh parsley
1 tsp dried oregano
Salt and black pepper to taste
Instructions
Preheat your oven to 400°F (200°C).
Season the chicken breasts with salt, pepper, and oregano.
Heat olive oil in an oven-safe skillet over medium-high heat. Sear the chicken breasts for 2-3 minutes per side until golden brown.
Remove the skillet from the heat. Scatter the Kalamata olives and crumbled feta cheese over the chicken.
Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the chicken is cooked through (internal temperature reaches 165°F or 74°C).
Garnish with fresh parsley before serving.
Notes
Serve with rice, quinoa, or a side salad.
