Ingredients

  • 1 ripe avocado, diced
  • 1/2 cup crumbled feta cheese
  • 1/4 cup chopped red onion
  • 1/4 cup chopped fresh parsley
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the chickpeas, diced avocado, crumbled feta cheese, chopped red onion, and chopped parsley.
  2. In a small bowl, whisk together the olive oil and lemon juice.
  3. Pour the dressing over the salad.
  4. Season with salt and pepper to taste.
  5. Toss gently to combine.
  6. Serve immediately.

Notes
