2 cups Greek yogurt
1/4 cup maple syrup
1 teaspoon vanilla extract
1 cup fresh strawberries, sliced
1/2 cup dark chocolate chips
1 tablespoon coconut oil
Instructions
Line a baking sheet with parchment paper.
In a bowl, mix the Greek yogurt, maple syrup, and vanilla extract until smooth.
Spread the yogurt mixture evenly onto the prepared baking sheet to about 1/4 inch thickness.
Arrange the sliced strawberries over the yogurt layer.
Freeze the yogurt sheet for at least 2 hours, or until completely firm.
In a small microwave-safe bowl, combine the chocolate chips and coconut oil. Microwave in 30-second intervals, stirring between each, until the chocolate is melted and smooth.
Drizzle the melted chocolate over the frozen yogurt bark.
Return the bark to the freezer for another 30 minutes to set the chocolate.
Break the bark into irregular pieces before serving.
Notes
Use full-fat Greek yogurt for the creamiest texture.
For a cleaner drizzle, transfer the melted chocolate to a small piping bag or a zip-top bag with a corner snipped off.
