2 cups plain Greek yogurt
1/4 cup maple syrup
1 teaspoon vanilla extract
1/2 cup fresh strawberries, sliced
1/4 cup dark chocolate chips
1 teaspoon coconut oil (optional, for melting chocolate)
Instructions
Line a small baking sheet with parchment paper.
In a bowl, mix the Greek yogurt, maple syrup, and vanilla extract until smooth.
Spread the yogurt mixture evenly onto the prepared baking sheet, aiming for about 1/4 inch thickness.
Arrange the sliced strawberries over the yogurt layer.
In a small, microwave-safe bowl, combine the chocolate chips and coconut oil (if using). Microwave in 30-second intervals, stirring between each, until smooth.
Drizzle the melted chocolate over the strawberries and yogurt. Use a knife or toothpick to swirl the chocolate slightly, if desired.
Place the baking sheet in the freezer for at least 4 hours, or until completely firm.
Once frozen, break the bark into irregular pieces. Store leftovers in an airtight container in the freezer.
Notes
For a thicker bark, use a smaller baking sheet.
You can use any type of yogurt, but Greek yogurt yields a firmer result.
If you do not have dark chocolate, milk chocolate works as an alternative.
