Cinnamon Roll Waffles

Combine buttermilk waffles with a brown sugar cinnamon and maple cream cheese drizzle for an over-the-top breakfast mash-up.

  • 2 cups all-purpose flour
  • 2 Tablespoons granulated sugar
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 cups buttermilk
  • 6 Tablespoons salted butter melted
  • 2 large eggs beaten
  • 1 teaspoon vanilla extract
  • 1 cup powdered sugar
  • 3 ounces cream cheese softened
  • 2 Tablespoons salted butter softened
  • 1/2 teaspoon maple extract
  • 23 Tablespoons milk or heavy cream
  • 3/4 cup brown sugar packed
  • 1/2 cup salted butter melted
  • 1 Tablespoon ground cinnamon

Instructions

  1. Preheat your waffle maker until hot.
  2. In a large bowl, whisk the flour, sugar, baking powder, baking soda, and salt.
  3. In a separate bowl, whisk the buttermilk, melted butter, eggs, and vanilla extract.
  4. Add the buttermilk mixture to the flour mixture, stirring by hand just until combined. The batter can be lumpy.
  5. Spray the waffle maker with cooking spray. Pour the batter onto the waffle maker, avoiding overfilling.
  6. Close the lid and cook for 3 to 5 minutes until the waffles are golden brown and crisp. Transfer finished waffles to a wire rack.
  7. For the cream cheese icing, beat the powdered sugar, cream cheese, softened butter, and maple extract with an electric mixer until smooth. Add milk or cream until you reach a pourable glaze consistency. Transfer the icing to a ziploc bag and set aside.
  8. For the brown sugar glaze, stir the brown sugar, melted butter, and cinnamon in a bowl until combined. Reheat and stir if it separates before serving. Transfer to a ziploc bag and snip off one corner.
  9. Drizzle the brown sugar glaze over the waffles, then drizzle with the cream cheese icing, and serve right away.

Notes

  • If you do not have buttermilk, mix 1 tablespoon of vinegar or lemon juice with enough milk to make 1 cup. Let this sit for 5 to 10 minutes before using.
  • You can freeze the waffles, cream cheese icing, and brown sugar glaze for 2-3 months. Toast the waffles in an air fryer or toaster to reheat. Reheat the icings in the microwave.
