Cinnamon Swirl Banana Bread (Cozy)

Ingredients

  • 1/4 cup granulated sugar
  • 2 teaspoons cinnamon
  • 4 overly ripe bananas, mashed (about 1 1/4 cup mashed)
  • 1/4 cup melted salted butter or coconut oil
  • 1/4 cup pure maple syrup
  • 2 eggs, at room temperature
  • 2 teaspoons vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon salt
  • 3/4 cup dark brown sugar (for crunch)
  • 1 tablespoon all-purpose flour (for crunch)
  • 1 tablespoon cinnamon (for crunch)
  • 2 tablespoons salted butter, melted (for crunch)

Instructions

  1. Preheat the oven to 350ยฐ F. Butter a 9×5 inch bread pan.
  2. Combine the 1/4 cup granulated sugar and 2 teaspoons cinnamon for the swirl.
  3. In a bowl, stir together the mashed bananas, 1/4 cup melted butter, maple syrup, eggs, and vanilla until combined. Add the flour, baking soda, and salt, and mix until just combined.
  4. To make the crunch topping, mix the 2 tablespoons melted butter, brown sugar, flour, and cinnamon for the crunch.
  5. Spoon half the batter into the prepared bread pan. Sprinkle with the cinnamon sugar mixture. Sprinkle with 1/4 cup of the crunch mix, reserve the remaining crunch mix for topping. Evenly spoon the remaining batter over the sugar layer. Sprinkle over the remaining crunch mixture.
  6. Bake for 50-60 minutes or until the center is just set. Remove and let cool for 30 minutes before cutting.

Notes

  • You can eat this warm with a smear of cinnamon butter.
  • Use overly ripe bananas for the best flavor and moisture.
