1/4 cup granulated sugar

4 overly ripe bananas, mashed (about 1 1/4 cup mashed)
1/4 cup melted salted butter or coconut oil
1/4 cup pure maple syrup
2 eggs, at room temperature
2 teaspoons vanilla extract
1 1/2 cups all-purpose flour
1 1/2 teaspoons baking soda
1 teaspoon salt
3/4 cup dark brown sugar (for crunch)
1 tablespoon all-purpose flour (for crunch)
1 tablespoon cinnamon (for crunch)
2 tablespoons salted butter, melted (for crunch)
Instructions
Preheat the oven to 350ยฐ F. Butter a 9×5 inch bread pan.
Combine the 1/4 cup granulated sugar and 2 teaspoons cinnamon for the swirl.
In a bowl, stir together the mashed bananas, 1/4 cup melted butter, maple syrup, eggs, and vanilla until combined. Add the flour, baking soda, and salt, and mix until just combined.
To make the crunch topping, mix the 2 tablespoons melted butter, brown sugar, flour, and cinnamon for the crunch.
Spoon half the batter into the prepared bread pan. Sprinkle with the cinnamon sugar mixture. Sprinkle with 1/4 cup of the crunch mix, reserve the remaining crunch mix for topping. Evenly spoon the remaining batter over the sugar layer. Sprinkle over the remaining crunch mixture.
Bake for 50-60 minutes or until the center is just set. Remove and let cool for 30 minutes before cutting.
Notes
You can eat this warm with a smear of cinnamon butter.
Use overly ripe bananas for the best flavor and moisture.
