Classic Apple Pie

  • 1 recipe pastry for a 9-inch double-crust pie
  • 3 pounds Granny Smith apples (about 8 medium), peeled, cored, and sliced 1/4 inch thick
  • 3/4 cup granulated sugar
  • 2 tablespoons all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 tablespoon lemon juice
  • 2 tablespoons unsalted butter, cut into small pieces
  • 1 large egg, beaten (for egg wash)
  • 1 tablespoon granulated sugar (for sprinkling)

Instructions

  1. Preheat your oven to 425 degrees F (220 degrees C).
  2. On a lightly floured surface, roll out one half of the pastry dough into a 12-inch circle. Carefully transfer it to a 9-inch pie plate. Trim and crimp the edges as desired.
  3. In a large bowl, combine the sliced apples, 3/4 cup sugar, flour, cinnamon, and nutmeg. Toss gently to coat the apples evenly.
  4. Pour the apple mixture into the prepared pie crust. Sprinkle the lemon juice over the apples. Dot the top with the small pieces of butter.
  5. Roll out the second half of the pastry dough into an 11-inch circle. Place it over the apple filling. Trim and crimp the edges to seal. Cut several slits in the top crust to allow steam to escape.
  6. Brush the top crust with the beaten egg wash and sprinkle with the remaining 1 tablespoon of sugar.
  7. Bake for 15 minutes at 425 degrees F (220 degrees C).
  8. Reduce the oven temperature to 375 degrees F (190 degrees C) and continue baking for another 35-45 minutes, or until the crust is golden brown and the filling is bubbly. If the crust starts to brown too quickly, you can loosely tent it with aluminum foil.
  9. Let the pie cool on a wire rack for at least 2-3 hours before slicing and serving. This allows the filling to set properly.

Notes

  • For a richer flavor, you can add a pinch of ground cloves to the apple mixture.
  • If you prefer a softer crust, you can brush the bottom crust with a little melted butter before adding the filling.
  • Serve warm with vanilla ice cream or whipped cream for an extra treat.
