Classic Chicken and Rice Bake

A simple and comforting one-dish meal featuring tender chicken and fluffy rice baked together.

  • 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1 cup uncooked long-grain white rice
  • 2 cups chicken broth
  • 1 can (10.5 oz) condensed cream of mushroom soup
  • 1/2 cup chopped onion
  • 1/4 cup chopped celery
  • 1/4 cup butter, melted
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon paprika

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, combine the uncooked rice, chicken broth, cream of mushroom soup, chopped onion, chopped celery, melted butter, salt, pepper, and paprika. Stir well to combine.
  3. Add the chicken pieces to the bowl and stir to coat them evenly with the rice mixture.
  4. Pour the entire mixture into a greased 9×13 inch baking dish.
  5. Cover the baking dish tightly with aluminum foil.
  6. Bake for 50-60 minutes, or until the chicken is cooked through and the rice is tender and has absorbed most of the liquid.
  7. Remove the foil during the last 10 minutes of baking if you prefer a slightly crispier top.
  8. Let stand for 5 minutes before serving.

Notes

  • You can substitute cream of chicken soup for cream of mushroom soup if you prefer.
  • Add your favorite vegetables like peas or carrots for extra flavor and nutrition.
  • For a richer flavor, use homemade chicken broth.
