  • 1 pound boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup broccoli florets
  • 1 cup chopped bell peppers (any color)
  • 1 cup chopped zucchini
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup chopped fresh parsley

Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add chicken pieces to the skillet and season with garlic powder, onion powder, salt, and pepper.
  3. Cook chicken until browned on all sides and cooked through, about 5-7 minutes.
  4. Add broccoli, bell peppers, and zucchini to the skillet.
  5. Stir-fry vegetables until tender-crisp, about 5-8 minutes.
  6. Add cherry tomatoes and cook for another 1-2 minutes until slightly softened.
  7. Stir in fresh parsley before serving.
