Simple Chicken and Vegetable Stir-fry

Ingredients

  • 1 lb boneless, skinless chicken breast, cut into bite-sized pieces
  • 2 cups broccoli florets
  • 1 red bell pepper, sliced
  • 1 cup sliced carrots
  • 2 tablespoons low-sodium soy sauce or tamari
  • 1 tablespoon sesame oil
  • 1 teaspoon grated fresh ginger
  • 2 cloves garlic, minced

Instructions

  1. Heat sesame oil in a large skillet or wok over medium-high heat.
  2. Add chicken pieces and cook until browned and cooked through, about 5-7 minutes. Remove chicken and set aside.
  3. Add broccoli, bell pepper, and carrots to the skillet. Stir-fry for 5 minutes until vegetables are tender-crisp.
  4. Return the chicken to the skillet.
  5. Add soy sauce, ginger, and garlic. Toss everything together and cook for 1 minute until heated through.
  6. Serve immediately.

Notes

  • For extra flavor, add a pinch of red pepper flakes with the ginger and garlic.
  • You can substitute chicken with firm tofu for a vegetarian option.
