  • 1 lb large or jumbo shrimp, peeled and deveined
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp curry powder
  • 2 tbsp extra virgin olive oil
  • 1 yellow onion, sliced
  • 1 bell pepper, sliced
  • 3 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 1 cup potatoes, diced
  • 1 tsp ground cumin
  • 1/2 tsp cayenne pepper
  • 2 fresh thyme sprigs
  • 1 can (14 oz) full-fat coconut milk
  • 1/2 cup seafood or chicken stock
  • Salt and black pepper, to taste
  • 2 tbsp fresh cilantro, chopped

Instructions

  1. Season shrimp with salt, black pepper, and 2 tbsp curry powder.
  2. Heat olive oil in a large pot over medium-high heat. Add onions and bell peppers, cook until soft (5-8 minutes).
  3. Add garlic and ginger, stir for 2 minutes until fragrant.
  4. Reduce heat to medium, add remaining curry powder, cumin, and cayenne pepper. Cook for 2-3 minutes.
  5. Pour in coconut milk, stock, and thyme sprigs. Bring to a boil, add potatoes, and cook until tender (5-7 minutes).
  6. Add seasoned shrimp, cover, and cook for 5 minutes until shrimp turns pink.
  7. Adjust seasoning, sprinkle with cilantro, and serve.
