Coconut Lime Chicken

A simple recipe for tender chicken with a bright coconut and lime flavor.

Ingredients

  • 1.5 lbs boneless, skinless chicken breasts
  • 1 can (13.5 oz) full-fat coconut milk
  • 1/4 cup lime juice
  • 2 cloves garlic, minced
  • 1 tbsp grated fresh ginger
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp chopped fresh cilantro, for garnish

Instructions

  1. Cut chicken breasts into bite-sized pieces.
  2. In a bowl, whisk together coconut milk, lime juice, minced garlic, grated ginger, salt, and pepper.
  3. Add the chicken pieces to the bowl and toss to coat.
  4. Marinate for at least 30 minutes, or up to 2 hours in the refrigerator.
  5. Cook the chicken in a skillet over medium-high heat until cooked through and lightly browned, about 5-7 minutes per side.
  6. Serve hot, garnished with fresh cilantro.

Notes

  • For a spicier dish, add a pinch of red pepper flakes to the marinade.
  • Serve with rice or your favorite side dish.
