A simple and delicious recipe for tender chicken with a rich, creamy gravy, perfect for a comforting weeknight meal.

  • 2 large chicken breasts, split lengthwise into thinner breasts (or 4 medium/small chicken breasts)
  • 1 tablespoon olive oil
  • 1 to taste kosher salt
  • 1 to taste black pepper
  • 3 tablespoons butter
  • 1 tablespoon chicken base (Better Than Bouillon recommended)
  • 4 tablespoons all-purpose flour
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 2 cups chicken stock
  • 1/2 cup water
  • 1/4 cup heavy cream (optional)
  • 1 for serving Instant Pot mashed potatoes (or rice/egg noodles)

Instructions

  1. In a small bowl, mix together the flour, onion powder, and garlic powder. Set aside.
  2. Lightly season the chicken breasts with kosher salt and black pepper.
  3. Heat olive oil in a large skillet over medium heat. Cook chicken about 5 minutes per side, until it reaches 165 F internal temperature.
  4. Remove chicken from the pan and set aside.
  5. Reduce heat to medium-low. Add butter and chicken base to the skillet and stir until melted.
  6. Sprinkle in the flour mixture and stir well to form a roux. Cook, stirring constantly, for 30 seconds to 1 minute.
  7. Slowly pour in chicken stock, scraping up browned bits from the bottom of the pan. Add water and whisk until smooth. Simmer until thickened to your liking.
  8. Stir in heavy cream if using.
  9. Shred chicken if desired, then return it to the gravy along with any collected juices. Simmer a few minutes. Taste and adjust seasoning only if needed.
  10. Serve over mashed potatoes, rice, or egg noodles. Optional sides: peas or garlic bread.

Notes

  • The only salt used in this recipe is to lightly season the chicken breasts. Do not add extra salt while making the gravy. There is enough salt from the seasoned chicken, chicken base, and chicken stock. Taste the gravy at the very end to see if it needs additional seasoning.
  • Use a heavy-bottom skillet for even browning and smoother gravy.
  • A whisk helps prevent lumps while the gravy thickens.
  • Use an instant-read thermometer to ensure chicken reaches 165 F internal temperature.
