Comforting Chicken Thigh Stew with Veggies

A hearty and flavorful one-pan meal featuring roasted chicken thighs and a medley of vegetables, perfect for a comforting dinner.

  • 8 bone-in, skin-on chicken thighs
  • 1 ยฝ lbs baby potatoes, halved or quartered
  • 1 lb carrots, peeled and chopped
  • 1 large red onion, cut into wedges
  • 1 large head of broccoli, cut into florets
  • 6โ€“8 whole cloves of garlic, peeled
  • ยผ cup extra virgin olive oil, divided
  • 1 tablespoon dried rosemary
  • 1 tablespoon dried thyme
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Kosher salt and freshly ground black pepper, to taste
  • 1 lemon, for zesting and serving wedges
  • Fresh parsley, chopped (optional for garnish)

Instructions

  1. Preheat oven to 400ยฐF (200ยฐC).
  2. In a large bowl, toss potatoes, carrots, and onion with 2 tablespoons olive oil, half the rosemary, half the thyme, salt, and pepper.
  3. Spread seasoned vegetables in a single layer on a large baking sheet. Scatter garlic cloves among vegetables.
  4. Pat chicken thighs thoroughly dry with paper towels.
  5. In the same bowl, toss chicken with remaining 2 tablespoons olive oil. Mix remaining rosemary, thyme, paprika, garlic powder, onion powder, 1 ยฝ teaspoons salt, and ยฝ teaspoon pepper. Season chicken on all sides and rub seasoning under the skin.
  6. Nestle chicken thighs, skin-side up, amongst vegetables on the baking sheet, ensuring space for air circulation.
  7. Roast for 25-30 minutes.
  8. Scatter broccoli florets around chicken and vegetables.
  9. Return to oven and roast for another 20-25 minutes, until chicken is cooked through and skin is crispy, and vegetables are tender. Internal temperature of chicken should be 165ยฐF (74ยฐC).
  10. Rest chicken for 5-10 minutes. Zest lemon over the dish and sprinkle with parsley. Serve with lemon wedges.

Notes

  • Using a large pan is critical; if the ingredients are too crowded, they will steam instead of roast.
  • Patting the chicken dry is crucial for crispy skin.
  • Resting the chicken allows juices to redistribute for a moist result.
